What Is A Santa Maria Grill?

The Santa Maria grill originated in California's Central Coast, where ranch cooking traditions developed around grilling large cuts of beef, particularly tri-tip, over red oak wood. The defining feature is a large, height-adjustable cooking grate operated by a crank wheel or chain mechanism.

Unlike Argentine parrilla cooking, Santa Maria grilling cooks directly over live wood flames rather than embers. The result is intense smokiness, aggressive searing capability, and the bold flavor that comes from fire contact with dripping fat. It is faster and more direct than Argentine asado.

The Crank Wheel: Precision Heat Control

The crank wheel is the signature of the Santa Maria grill. By raising and lowering the entire cooking grate, the cook can control heat intensity without touching the fire itself. High position for gentle cooking, low position for a hard sear over live flame.
