What exactly is an Argentine parrilla?

An Argentine parrilla is a live fire grill built around asado tradition, cooking over wood embers rather than direct flame. It features a brasero firebox on the side where wood burns down to coals, adjustable grates that raise and lower over those embers, and a cooking style focused on patience, control, and layered flavors.

It is fundamentally different from a gas grill, a charcoal kettle, or even a Santa Maria grill, though Brasero Grills builds a hybrid that combines Argentine parrilla tradition with the Santa Maria crank wheel system. Learn more about Argentine parrilla cooking.

How is this different from a Santa Maria grill?

A Santa Maria grill cooks directly over live flame and uses a large crank wheel to raise and lower grates for heat control. An Argentine parrilla uses a brasero to produce embers and cooks over those embers, slower, more controlled, with less flare-up and more even heat.

Why are the grates FDA-approved ceramic?

We apply an FDA-approved ceramic powder coat finish to all grates, the same food safety standard used in commercial kitchen equipment. This means no flaking, no off-gassing, and no compromise on food contact surfaces even at high live fire temperatures.

Nobody else in the Argentine parrilla or Santa Maria grill market is doing this. It is a deliberate decision made by people who came from professional kitchens where this standard is non-negotiable.

How do I commission a build?

We respond within 24 hours with a personal reply. We discuss your build, your space, your cooking style, and your timeline. A 50% deposit locks in your slot and your current pricing. Build begins immediately.

How long is the build and delivery timeline?

Current lead time is 4 to 6 weeks from commission to delivery. Every build is fabricated to order. No rush jobs.

Q2 2026 commissions are open. Steel costs are rising and your price locks at your commission date, not at delivery. If you are considering a build for summer use, now is the time to get on the queue.

What does delivery look like?

Every Brasero ships across the continental US via freight. White-glove options are available on select models for an added fee. We coordinate shipping directly with the carrier and stay in touch from dispatch to arrival.

Why is the steel 1/4 inch? Does it matter?

Yes, it matters enormously. Most factory Santa Maria grills use 10-gauge or 3/16" steel. At those thicknesses, the steel warps under sustained high heat, loses its shape over time, and fails to hold thermal mass.

1/4" heavy plate carbon steel is a different category. It holds heat for hours, distributes it evenly, handles decades of live fire without warping, and gives the grill a physical weight and presence that thinner steel cannot match. When you stand next to a Brasero, you feel the difference before you fire it up.

Can I see one before I commission?

Yes. Contact us and we can arrange to show you a build in person on Long Island. There is no obligation. Seeing one in person, especially the La Fortaleza La Rueda Edition with the wagon wheel frame and golf cart wheels, is the fastest way to understand what these are.
