Own The Fire™ Culinary Group was built on a simple premise: the equipment matters as much as the technique. Twenty years in professional New York City kitchens taught us that. Equipment either performs under pressure or it fails. There is no middle ground.

When we discovered Argentine asado tradition, the brasero firebox, the adjustable grate, the live fire methodology passed down through generations of serious cooks, we went deep. We studied the technique, practiced it obsessively, and eventually asked a question nobody in the market had answered: why wasn't there an American-built Argentine parrilla that met professional kitchen standards?

There wasn't one. So we built it.

The first build was for ourselves. The second was a commissioned piece that stopped a crowd of tradesmen cold in a Long Island backyard. The third was commissioned before the second was finished. That is how the Forge Collection began, not from a business plan, but from a standard that nothing on the market could meet.

2023

The First Build

Own The Fire™ Culinary Group fabricates its first Argentine parrilla. Built to a standard the market didn't offer. 1/4" plate steel, fire brick lined firebox, chrome crank wheel. Built for us, nobody else was making it right.

2024

The Word Gets Out

First commissioned build. John Maraia sees it, his crew sees it, the phones start. The Forge Collection takes shape as a real product line. FDA-approved ceramic grates added as standard, a food safety specification nobody in the market was applying.

2025

The Ultimate Is Born

The La Fortaleza La Rueda Edition, wagon wheel frame, Golf Cart Wheels with custom black rims, is fabricated. The piece that makes Blackstone feel like a toy. The product line expands to include The La Forja wood fired pizza oven and El Altar cook station.

2026

BraseroGrills.com Launches

The Forge Collection goes live. Q2 2026 commissions open. Steel costs rising. The wait list is open. If you're reading this, you're early, and that matters.

Beyond The Grate.

Every Brasero is built to do more than grill. Rotisserie, smoke, ember cook, vertical roast, pizza oven. The rig adapts to the menu, not the other way around.

This is what twenty years behind the line teaches you. The fire is the constant. Everything else is technique.
